Salted Cookie Dough Squares

These have to be by far the best dessert I have whipped up yet; and that says a lot! This recipe is full of delicious, clean ingredients that sum up to a delicious, decadent and chewy slice of chocolate chip dough square.

They also very much remind me of the cookie dough they serve at Pizza Hut with a dollop of vanilla ice cream, but this definitely has a much more tastier texture and of course is so much better for you! It satisfies any little sweet cravings you might have and really get those taste buds working. There is absolutely no sacrifice in flavour with this recipe, just make sure you don’t demolish it all in one go (warning!).. or maybe you can, up to you!


1/4 cup buckwheat flour

1 cup ground almonds

1/2 cup almond butter

1/4 cup coconut oil, melted

1/4 cup coconut sugar

1/2 cup date syrup

3/4 – 1 cup hazelnut/coconut milk

1/2 cup dark chocolate, chopped into small squares ( I used “OMBAR” chocolate because it’s my favourite and it tastes exactly like milk chocolate without any of the dairy)

1/2 tsp himalayan salt


Preheat the oven to 180C. Line a square baking tray with oil greased baking paper.

In a large bowl, combine the coconut oil and coconut sugar and mix thoroughly. Add in the date syrup and almond butter and mix once again. After that, add in all the dry ingredients including the ground almonds, flour, chopped chocolate and salt. Mix well until all ingredients are combined. Lastly, add in your milk and mix again until you form a cake-like batter.

Pour the mixture into the baking tray and place into the oven for 20 – 30 minutes. Your kitchen should now be smelling glorious!

Once out of the oven, let it cool down for 10 minutes and then cut into small squares.
