Strawberry Vanilla Smoothie Bowl

The smoothie bowl craze has been going strong for the past few years, and what’s not to love?! Rather than drinking your smoothie, making it thicker allows you to add some toppings and eat it with a spoon! This combination made with bananas, strawberries and vanilla was absolutely delicious and will be on repeat again. It literally takes 5 minutes to make, so it’s great for weekday breakfasts (just make sure you freeze the bananas the night before).

I added some toppings to my bowl for some texture and colour, but if you want to keep it light, just some berries alone would work fine.

2 bowls

Ingredients:

1 frozen banana

1 1/2 cup frozen strawberries

1/2 cup oat milk

1 tsp vanilla bean

Topping:

Frozen raspberries

Frozen blackberries

Pumpkin seeds

Coconut flakes

Cacao nibs

Method:

Place the frozen banana, strawberries, vanilla bean and oat milk in a blender. Process until completely smooth but the mixture should be thick. Add a touch more liquid if necessary to get it to blend completely smooth.

Transfer to a bowl and add toppings as desired. Enjoy!
