Chocolate (No-bake) Brownies

This recipe is so quick and easy to make, they make the perfect go-to snack and last a week when made on a weekend. No need for an oven to make and devour; just a fridge or freezer and a few other ingredients!

It’s crunchy, chewy, chocolatey and delicious; it will leave you wanting just that bit more (if not a lot!) They have no added sugar, and just purely sweet from the soaked gooey and caramel-like dates. The almonds and walnuts make this a perfect post-workout snack acting as a natural protein source that helps renew and rebuild muscles cells. If you’re not an athlete or a big fan of exercising, these still make the perfect and most delectable post-dinner dessert, particularly with a creamy scoop of refreshing vanilla ice cream.

16 small squares

Ingredients:

1 1/2 cup almonds

1 cup walnuts

2 1/2 cups dates  (soaked for at least 15 minutes)

3/4 cup cacao powder

2 tbsp cacao nibs (optional)

1/2 tbsp coconut oil

 

Method:

Place walnuts and almonds in food processor and process until finely ground. Add the cacao powder and pulse to combine. Transfer to bowl and set aside.

Add the dates to the food processor and process until small bits remain. Add the 1 cup almonds and walnuts, oil and cacao mixture back into food processor. Process until a dough consistency is achieved, adding more dates if the mixture does not hold together when squeezed in your hand.

Add the brownie mixture to a small parchment lined pyrex and before pressing, add remaining 1/2 cup roughly chopped almonds and cacao nibs; combine and evenly distribute. Then press down with hands until it is flat.

Place in freezer for 3-6 hours; remove 15 minutes before cutting into 16 small squares.
