Caeser Salad

There are many Caesar salad recipes out there and although it’s nothing new or imaginative, I still felt there was room for just one more. This salad is a fresh, plant-based take on the classic recipe.

Crisp lettuce drizzled in a creamy Caesar dressing, topped with crunchy croutons and plant based chicken. It’s the perfect crowd-pleasing dish that’s packed full of nourishing ingredients. Everyone loves it! Vegan or not.

Ingredients:

1 cup lettuce, roughly chopped

1 cup, mixed greens

1/2 cup carrot, shredded

1/2 cup cabbage, shredded

1 avocado, chopped

1/4 cup croutons

Mozzarella cheese, violife

Naked glory “chicken” , cooked in the oven

Dressing:

2 tbsp nutritional yeast

1/2 cup vegan mayonnaise

1 tsp garlic

2 tbsp lemon juice

1 tbsp maple syrup

1 tbsp olive oil

Salt to taste

Method:

Dressing: Add all the ingredients to a measuring jug and blend up with a blender. Alternatively add all ingredients to blender jug and blend until smooth.

Place all the salad ingredients in a large bowl and drizzle the dressing on top. Serve and enjoy!
