Chocolate Energy Truffles

A few weeks back I had exams and naturally needed a pick me up and a boost of energy to keep me going with revision. My favourite thing about this recipe is that there is no baking necessary and it is one of the fastest treats to curb your sweet treat craving. They are the perfect size, and with a few ingredients, you can make big batches that you can store in the refrigerator to last you the whole week (that’s if they won’t be gone on the same day!) My family enjoyed it a lot, especially my dad. He asked for them the next day for pudding; now that’s what I call an accomplishment.

Ingredients:

2 cups Medjool dates

1/2 cup dried Apricots

1 cup Almonds

1 cup Walnuts

1/4 cup Cacao Powder

3/4 cup unsweetened Coconut flakes

1/4 tsp Pink Himalayan Salt

1 tsp Cinnamon 2 tbsp Coconut Oil

Method:

Place the walnuts and almonds into a food processor and blend for around 5 minutes, until all the nuts are ground. Then add in all the rest of your ingredients and blitz for another 2 minutes. Roll the batter you are left with into small truffle sized balls and serve!
