Mediterranean Date Halva

Nothing will make you love and appreciate a simple snack so much as a day of fasting. If I’m not having a busy week, I usually like fasting once or twice a week to reset my body and aid digestion; my skin feels better as a result and my energy levels stay pretty high. For this special reason, in an effort to approach my fast from the perspective of nourishing my body and giving my digestive system a break I made these Halva-inspired bars with a date and apricot base.

I love my sweets, and I find that I enjoy them more after a day of fasting, so there’s absolutely nothing wrong with having a bite of something nourishing on a fast or cleanse. I preferably like going in for something with (good) fat to calm the nerves and tell my brain that I’m not starving. A bite of avocado, a spoonful of almond butter, or one of these guys will help nourish our nervous system and produce healthy hair and skin.

These energising, lightly sweet bars are a perfect pre or post workout snack. I particularly like them before a HIIT class or just a general trip to the gym. They’re also great as a workout recovery snack. Blended with cacao to improve stamina and endurance, and not to mention they’re packed with calcium, potassium, and magnesium.



12 squares


2 cups medjool dates

1 cup dried apricots

1/2 cup walnuts

1/2 cup pistachios

1/2 cup cashews

1/2 cup hazelnuts

1/4 cup sesame seeds

1 tbsp maple syrup

1 tbsp tahini

2 tbsp raw cacao powder

4 heaped tbsp coconut oil, melted



Place all the nuts in a food processor and blend until you achieve a crumbly texture. Add the rest of the ingredients and blend again.

Line a baking tray or pyrex with cling film. Place the mixture into it, flattening it out smoothly and freeze for 1-2 hours. Heat a knife and cut for perfect squares.

Serve and enjoy!
