Cookie Dough Bites

Rich, delicious and satisfying no-bake chocolate chip cookie dough bites take just minutes to mix up! With pure, real food ingredients, you can have far more than one. Since there is no oven needed, this is a great recipe for kids to make.

They actually taste like raw cookie dough (and who doesn’t love that!?) but they are full of whole grains, dietary fiber, healthful fats and plant-based protein.  They come together in under 10 minutes and require only a few ingredients that you likely have on hand.

 12 bites

Ingredients: 

1 cup cashew nuts

1 tbsp cashew butter

1/2 cup rolled oats

1/4 cup chocolate chips (I used Dark chocolate)

3 tbsp maple syrup

1/2 tsp cinnamon

1 tsp vanilla extract

1 tsp coconut oil

1/2 tsp salt

Method: 

In a food processor, blend the cashews, oats, cinnamon and salt to form a flour. Add in the maple syrup, cashew butter, coconut oil and vanilla and pulse, until you form a dough. Then fold in the chocolate chips, until well combined.

Take a tablespoon of the mix and roll to form a ball. Place onto a plate or tray and refrigerate for one hour. Serve and enjoy!
