Energising Smoothie Bowl

If you’re a sweet-over-savoury breakfast person, but still want to eat a nutrient dense meal in the morning, smoothies and smoothie bowls will be your thing. They’re sweet but full of sneaky fruit and superfoods! In this particular bowl, I used a banana, kiwi, pineapple and of course for that beautiful green tone I added in a little of my favourite energising superfood: Matcha! It’s one of nature’s richest sources of the rare antioxidant EGCG which your body will love!

My favourite bit is decorating the bowl once it’s done and that comes by no surprise! I went with raspberries, blackberries, blueberries and cherries with a generous sprinkle of shredded coconut and pumpkin seeds.

Serves 1-2

Ingredients:

1 frozen banana, sliced

1/3 cup of almond/oat milk

1/2 tsp matcha powder

1/2 tsp vanilla extract

1 cup pineapple, chopped

1/2 kiwi, roughly chopped

1 medjool date

Toppings

Raspberries, blueberries, blackberries, cherries, shredded coconut and pumpkin seeds

Method:

Place all the ingredients except for the toppings in a blender and blend until smooth and creamy.

Add more almond milk if needed, 1 tablespoon at a time, to get the blender going being careful not to use too much (you want it to be creamy!).

Pour into a bowl (or two) and add the toppings, nicely decorated, for that perfect aesthetic touch.
