Quinoa is one of the most amazing foods to incorporate into your breakfast, because of it’s load in protein. Plant based protein can be extremely alkalising, as well as giving you enough sustenance to last you all morning. Protein is broken down slowly in the body, meaning you are kept fuller and energised for longer.
The dates and banana give it that natural sweetness, the coconut gives it a crunch and the dark chocolate adds so much richness it will leave your heart extremely warm and happy. If you want to jazz up your current breakfast routine, try this and you’ll love it!
Ingredients:
1/2 cup quinoa
1 cup of water
1/2 banana, sliced
2 dark chocolate squares (I love using Ombar/Pana chocolate/Lovingearth), chopped
1 medjool date, chopped
Handful of toasted coconut flakes
2 tbsp coconut milk
1-2 tsp cinnamon
1 tbsp maple syrup/coconut sugar (optional)
1 tsp vanilla extract
Method:
Cook the quinoa, following the instructions on its package. Last 5 minutes of cooking, add in vanilla and cinnamon. Once it’s cooked, pop the quinoa in a bowl. Place on top the banana, dates, chocolate and drizzle over the coconut milk.
