CHOCOLATE! My favourite word when it comes to dessert. These Healthy Chocolate and Salted Caramel Truffles are simply the BEST!
If you’re like me and pretty much always have chocolate on your mind, these are perfect!
Creamy, sweet, and soft with an oozing delicious caramel centre, coated with a thick layer of decadent chocolate-date mix, rolled into five different flavours!
Personally, I always like to keep it on hand, because you never know when you’re going to get an overwhelming hankering for something sweet! Or if you’re like me, you might live in a state of continual chocolate cravings. In that case, just a few pieces of this stuff will help satisfy that sweet tooth.
I love them as a sweet treat after dinner, to take to parties, or give as a gift!
20 large truffles
Ingredients:
2 cups almonds
2 cups dates, pitted
1 tsp Vanilla extract
4 tbsp cacao powder
2 tbsp hazelnut/almond milk
2 tbsp almond butter
1 tbsp maple syrup
Caramel:
1/4 cup cashew butter
2 tbsp maple syrup
1 tsp almond milk
Toppings:
1/4 cup ground pistachios
1/4 cup ground hazelnuts
1/4 cup flaked almonds
1/4 cup cacao powder
1/4 cup freeze dried raspberries
Method:
Add the almonds into the food processor first and blend until it is ground. Then add in the remaining truffle ingredients (dates, vanilla, almond butter, cacao, milk, and maple syrup) and mix until everything is thoroughly combined.
For the caramel: In a small bowl, mix the cashew butter, almond milk and maple syrup. Mix until you achieve a nice creamy consistency.
Scoop out a tablespoon of the dough mixture, flatten out into a circle and add 1/2 tsp-1tsp of the caramel. Fold over and roll into a truffle ball.
Using the different coating flavours, roll each truffle into it (e.g. the ground pistachio, hazelnut, etc.)
Place onto a tray and leave in the fridge for an hour or two. Serve and enjoy!
